If no `download_uri` is specified, fallback to calculating latest-available version on GitHub
Use the `git_bash.pkg.archive_type` (pillar) parameter to determine what source URI to construct if using the "fallback to GitHub-hosted releases" method
* Enable "Long Paths": Prevents failures when developers work with deep nested directory structures * Standardize endings: Ensures seamless cross-platform line-ending translation between Linux/macOS environments and Windows targets. * Bind to host-OS certificate store: Ensures that SSL-based operations use the same CAs that other, OS-level tasks do (especially useful in environments where the OS has been configured with custom CA-lists)
Previous method was blowing away good defaults that were delivered with the installers. Switching to this method *should* make things less-destructive.
Also: ensure that when the launcher-icons are clicked, the Git-BASH shells are opened in "login" mode
