Overview
Pins the Helm chart’s default engine and metadata images to release-5.0.0-pre.0.20260803130231.8ec167d19785, replacing the previous release-5.0.1-… build so chart defaults stay aligned with GHCR :latest after packdb promotion.

Updates are limited to helm/Chart.yaml appVersion, the regenerated AppVersion badge in helm/README.md, and the lockstep override example in docs/usage/image-overrides.mdx. Chart version (0.3.0) and templates are unchanged.
