[GRO-1273] Add GTM demo coverage for open-operator

Summary

• add regression, integration, and Playwright smoke coverage for the open-operator GTM demo
• cover Anthropic model fallback, Browserbase session invariants, and startup progression past the first action
• run the new coverage in CI on pull requests and pushes to main
