Switches build-pr from the temporary branch ref to the released v2.0.1 tag and bumps the remaining workflows (publish, release-please, close-invalid-prs) from v2.0.0 to v2.0.1 for consistency. v2.0.1 ships the matrix XML aggregation fix plus the dedup of junit_files globs.
