Updates the Gradle version catalog so the project’s “Minecraft expectations” dependencies align with Minecraft/Paper 1.21.1 (the stated lowest supported version).

paper-apiversion reference to1.21.1-R0.1-SNAPSHOT. - Pin Log4J version reference to
