[Feature] GraphQL-WS Subscriptions Support

We received feedback that lack of GraphQL-WS subscription support is a blocker for some users adopting the tool.

We should discuss:

• The technical feasibility of adding this to the current Request/RPC layer.
• Priority relative to other protocol support.

haven't looked at the codebase but just seeing this reminded me of https://github.com/wundergraph/wunderbase
not sure if you can draw anything from that project. If not please disregard.
