[Feature Request] Upgrade Speech-to-Text to Coqui STT

Hi there 👋 

I'm not sure if this project is still maintained, but Mozilla's DeepSpeech isn't (https://github.com/mozilla/DeepSpeech/issues/3693).

It would be a pretty small lift to upgrade to 🐸STT for the speech recognition, and the quality has very much improved:)
