Upgrade `Beta` development stage to `Production/Stable` within `pyproject.toml`

Currently the development stage identifier for CodeEntropy is still classified as Beta, as v1.0.0 is now a released this should be upgraded to Production/Stable as CodeEntropy is now a more stable release
